More Kefir Please

 

If you have eaten at one of my tables you know that I am a little yogurt obsessed. From appetizers to desserts its one of my favorite ingredients to incorporate in my dishes. Now that we have entered soup season, it remains at the top of my go-to lists for soup toppers. If you're really into the yogurt tang try kefir milk-its a game changer. 

What is Kefir?

Kefir is more or less a drinkable yogurt with added beneficial yeasts and probiotics. It is made from a gelatinous grain which ferments the milk and is then removed before serving. 

Goat Milk Kefir Dressing-I use this recipe to top fish, chicken, soup and salads. 

Ingredients

1 cup goat kefir milk

1 clove garlic

1 t chopped dill (or basil, thyme, rosemary whatevs)

1 t olive oil 

1/2 t salt

Muddle your garlic and salt into a fine paste. Add your kefir milk and chopped herbs and mix. Top your dressing with 1 t of olive oil and some fresh cracked black pepper.

When pairing a sharp, nutty cheddar think about mirroring those big flavors in the wine. Cabernet Sauvignon is a grape with lots of tannic structure and fruit that can hold up to a big, bad cheddar.
